Each year Lebkuchen Schmidt presents its Lebkuchen of the Year. For 2016 the new recipe is a nut and chocolate lover’s fantasy: Chocolate Cashew Dream (in German “Cashew-Schoko-Traum”)! Lots of finely ground almonds and cashews inside with crunchy hazelnut chunks on top…all smothered in milk chocolate.

Gingerbread World Lebkuchen Schmidt Canada - Cashew Chocolate Dream - Lebkuchen of the Year - Cashew Nut FruitsCashews are my all-time favorite nut. I love the mild and rich taste. I was fascinated to see cashews in Costa Rica when we were travelling as a family – I
had no idea they grew on trees (pretty big trees) and that the fruit – or apple – is a beautiful, colorful part of the process. In fact, in some cases cashews are referred to as fruits not nuts. Among the many health benefits of eating cashews my favorites are:

  • Cashews are high in fiber/low in fat
  • They help lower your "bad" cholesterol and reduce the risk of heart disease and stroke
  • Cashews contain antioxidants that help to strengthen the immune system
  • They contains very high levels of vitamin C

The Lebkuchen of the Year is always Elisen Lebkuchen – premium Lebkuchen because of its high nut oil content. Elisen Lebkuchen were named after a Lebküchner's daughter and have been the masterpieces of the Lebkuchen Guild since 1808.

Baked Apple Elisen Lebkuchen was the 2014 Lebkuchen of the Year - infused with baked apple for a soft, wonderfully aromatic and tasty treat this was one of my personal favorites. Black Elise introduced in 2013 is Elisen Lebkuchen with 28% nuts and almonds and cocoa powder in the dough and the whole cookie smothered in dark chocolate glaze. This was a huge hit and many customers ask for this special cookie each year. Fortunately Schmidt has continued this recipe and the Black Elise may be found in six different packages.
