At Niederegger, It’s Already Easter in February
Every year, while most of us are still wrapped in winter coats and lingering in the quiet after-Christmas, something remarkable begins in Lübeck, Germany.
At the famous Niederegger marzipan manufactory, Easter is already in full swing.
This article recently published in the Hamburger Abendblatt offers a glimpse behind the scenes of Niederegger’s Easter production — where delicate marzipan bunnies, eggs, and spring confections are shaped, dipped, and decorated by hand long before the first crocuses appear.What always fascinates me about Niederegger is just how traditional and hands-on the process remains.
About ten years ago, I had the opportunity to visit the Niederegger “factory” myself. Although I didn’t get to see the Easter bunnies being made at that time, I did see firsthand how much care goes into forming and decorating their marzipan confections. The shaping, the smoothing, the dipping in chocolate, the finishing touches — it is craftsmanship, not mass production.
But what I remember most vividly is the scent.

The entire building carried the warm, sweet aroma of roasted almonds. It wasn’t overpowering — just rich and comforting. If you love marzipan, you know that scent immediately. It’s the smell of quality almonds, carefully ground and blended in the traditional Lübeck style that has made Niederegger world-famous.
Reading about their Easter preparations now brings all of that back — the skill, the tradition, and that unmistakable almond fragrance that seems to announce spring long before the calendar does.
