Called for in many German and European baking recipes, Hail or Pearl Sugar are sweet, crunchy chunks of sugar used for decorating and dressing up pretty much any kind of dessert. Use it as you would Turbinado Sugar - sprinkled on the tops of muffins, cookies and sweet breads. The sugar particles do not dissolve during the baking process.
