Lebkuchen Schmidt's signature special recipe: Schwarz (Black) Elise was created by mistake by bakery founder E. Otto Schmidt back in the late 1920's.
A tin of cocoa tipped over into the bowl of Lebkuchen dough. The batter became completely black due to the dark powder. But before he threw it all out, Mr. Schmidt tasted and found that the mistake extremely tasty! Only the fact that cocoa was so expensive at the time prevented Schmidt from adding it to their regular selection. E. Otto Schmidt therefore baked Christmas gingerbread exclusively for his family according to this recipe.
