Schmidt Bakery's 2017 Lebkuchen of the Year - Meisterwerk 90
The 2017 Lebkuchen of the Year - introduced annually by Lebkuchen Schmidt - celebrates their 90th Anniversary. Meisterwerk 90 (or in English Masterpiece 90) is a simple specialty: a whole lot more of what makes Lebkuchen so special: nuts.
The main ingredients for baking Lebkuchen are: Hazelnuts, Walnuts, Almonds, Candied Orange and Lemon Peel, Honey, Flour, Sugar, Eggs and Marzipan. Added to these are exotic spices from all around the world (cinnamon, cloves, anise, cardamom, coriander, ginger and mace).
We've all heard the term "German Engineering" and it applies as much to gingerbread cookies as it does to fancy cars and elevators. German laws mandate how many nuts go into the different types of Lebkuchen: "Regular" Oblaten Lebkuchen must contain a minimum of 7% oilseed (nut) content and "Premium" Oblaten Lebkuchen with a minimum of 14% oilseed (nut) content. Elisen Lebkuchen - considered to be the Rolls Royce of Lebkuchen - must have an oilseed content of at least 25% and only "precious oilseeds" can be used: hazelnuts, walnuts and almonds.
So where does this year's Lebkuchen of the Year come in: Meisterwerk 90 contains 40% nut content which makes for a nuttier flavor and a more moist and textured cookie. Plus it's coated with dark German chocolate and drizzled with milk chocolate.
